For the blueberry mix:
¾ c. sugar
¼ c. shortening
1 egg
½ c. milk
2 c. flour
2 tsp. baking powder
½ tsp salt
2 c. blueberries
For the crumb mixture:
½ c. sugar
1/3 c. flour
½ tsp. cinnamon
¼ c. butter, softened
Preheat oven to 350 degrees.
For the buckle, mix sugar, shortening and egg. Stir in milk, flour, baking powder and salt. Blend in berries (do not over-mix or batter will become purple.)
Spread in a 9-inch round cake pan and sprinkle with crumb mixture.
